Fresh, Headed & Gutted Salmon

For the 2009 season, we're shipping fresh, whole, headed and gutted salmon from Dillingham, AK to Portland, OR. We can ensure a fresh product through careful handling and packaging in insulated boxes with thermal blankets and frozen gel packs. Our fish is bled and iced immediately out of the net, to ensure the best flavor, texture, and quality.

  • King Salmon

    Common names: King salmon, Chinook salmon, Spring salmon

    Identification: Bluegreen to black backs with black spots, silver sides. Black spots on back and tail. Dark colored or black gums.

    Size: Average 18-20 lbs, can range up to 40 lbs.

    These magnificent fish are prized for their flesh color, high oil content, delicate texture and succulent flesh. King salmon are often served in upscale restaurants, and deserve their royal status and superior price. They are also commonly used for smoking.

  • Sockeye Salmon

    Common names: Sockeye salmon, Red salmon

    Identification: Blueish green with fine black speckling on dorsal side, silvery below; no large spots on back.

    Size: Average 6 lbs, range 4-10 lbs.

    Sockeye are the second most abundant species of Alaska salmon. Most Sockeye go to Japan where they are highly prized for their distictive deep red flesh color. However, an increasing percentage of the catch now remains in the US, as the domestic market discovers the superior attributes of Sockeye. Like King salmon, the levels of polyunsaturated oils in Sockeye give it a succulent texture and rich flavor.
